Preparation
1. Prep your veggies, sides and sauces in advance.
2. Remove the roast from the vacuum pack and remove the netting.
3. Slice the Roast and add to a non-stick pan with some olive oil and an inch of broth or water. Add a spring offers rosemary or thyme, and a few garlic cloves for extra flavour (optional).
4. Cover and bring to the boil. Simmer the roast for about 15 minutes, turning half-way, until piping hot all the way through. Uncover and reduce the remaining liquid to a sauce.
Serve smothered in gravy or your favourite sauce, beside to your roasted veggies and a drink!
ALTERNATIVELY:
Simply cook the Roast at 180C in a tightly covered baking dish in the oven with about an inch of broth to lock the moisture in – for about 20 minutes. You could also wrap it in puff pastry and make a wellington.
*Never leave the roast uncovered in the oven as it will result in a tough/dry outer layer.
